Garlic Stuffed Mussels

We had some leftover mussels in the freezer, had an idea to make Stuffed Mussels to be eaten with Spaghetti Seafood Alfredo.



Makes around 30 to 40 Stuffed Mussels

Ingredients
50 Mussels, chopped
2 Tbsp Butter or Margarine
1 diced Onion
4 cloves Garlic, peeled and diced
1 Egg, slightly beaten
1 cup Bread Crumbs
1 pinch of Oregano Leaves
1 pinch of Dried Parsley
salt and pepper to taste
1/2 cup cheddar cheese
extra cheddar cheese for topping
a splash of milk
water

Method:
1. Preheat oven to 60°C.
2. Soak mussels in water for an hour to remove trapped sand.
3. In a pot, steam mussels with water until open, strain and set aside to cool.
4. Once cool, remove the meat from half shell and chop coarsely. Set mussels and shells aside.
5. In a pan, melt 2 tablespoons butter. Add onion and garlic. Cook until onion is tender. Add the meat to combine. Set aside to cool.
6. In a separate bowl, combine egg, 1 cup bread crumbs, Oregano Leaves, Dried Parsley, salt and pepper to taste. Add the onion, garlic, meat mixture, and 1/2 cup cheddar cheese. Mix well.
7. Add a splash of milk to wet the mixture slightly, this will create a creamier texture.
8. Spoon mixture into reserved shells. Place shells on baking tray.
9. Sprinkle extra cheddar cheese on top.
10. Bake stuffed mussels in oven at 180°C until golden brown.

I also did a quick and lazy version of Spaghetti Seafood Carbonara. Refer recipe below! :P



Serves 4.

Ingredients
4 tbsp of Prego Carbonara Mushroom
5 tbsp of Stuffing from the Garlic Stuffed Mussels* (recipe above)
200 ml of milk*
200 ml of water*
1 pinch of Oregano Leaves
1 pinch of Dried Parsley
1 dash of Cayenne Pepper
salt and pepper to taste
1/4 cup cheddar cheese
cooked Spaghetti for 4 people

* adjust liquids accordingly. i didn't really measure. i always eyeball when i cook. :P

Method
1. Add everything into a small pot on medium heat, mix until thicken.
2. Serve with cooked Spaghetti and Garlic Stuffed Mussels.
