Ultimate Chocolate Cookies

Salam & Hi.

The actual name for these cookies was 'Triple Chocolate Cookies', but I couldn't find 3 types of chocolate bars (milk, white, dark chocolate). The supermarket I went to only had milk chocolate bars, so I bought 2 medium sized bars. But it does have a very chocolaty taste despite having only 1 type of chocolate in it, hence the name 'ultimate'. Imagine if I used 3 big bars of chocolate. Chocolate overdose, anyone? :P

I found this recipe on Youtube, on Tanya Burr's Vlog, who found the recipe from Anna's Blog. Anna found the recipe from this guy on Youtube. :P

As you can see from the photos below, these cookies are HUGE! The recipe ask you to make them info handful size balls, slightly bigger than golf balls, but I used an ice cream scoop to make it uniform.


Makes 12 big size cookies (I manage to get 14!)

200 g unsalted butter
300 g caster sugar
1 large egg
275 g self-raising flour
75 g cocoa powder
3 medium bars of chocolate (white, milk, dark)
a splash of milk

* If you only have plain flour, you can make you own self-raising flour.

To make 1 cup of self-raising flour, you need :
. 1 cup of plain flour
. 1 1/2 tspn of baking powder
. 1/2 tspn of salt

I manage to get the exact total of 275 g by combining 2 1/2 cups of plain flour + 3 3/4 tspn of baking powder + 1 1/4 tspn of salt. Please reweigh to make sure you get the right amount of flour.

1. Throw your butter into a bowl and heat it in the microwave for a few seconds to soften, take out and add in the sugar. Mix with a spoon or electric whisk until creamy.
2. Crack in an egg and mix some more, then throw in your dry ingredients: self-raising flour and cocoa powder. Mix until well blended.
3. Add in the chocolate bars (which has been broken down into squares). Things might seem a little dry at this point so pour in a few drops of milk so that you get a cookie dough texture.
4. Line two trays with baking paper or aluminium foil, scoop the mixture into 12 handful size balls and place far apart on the tray.
5. Pop in a preheated fan oven at 220°C (200°C for non-fan) for 10 minutes.
6. They will be super soft when you remove them, but leave them to cool for around 30 minutes. They will stiffen up ready for your cookie eating pleasure.

If triple chocolate isn't your style, then add whatever additions you fancy into the mix; add a spoonful of peanut butter or a handful of peanuts to make a sweet and salty treat.
