Kacang Pol/Pool

I know there's a lot of ways to make Kacang Pol, but this is my version, a very simple recipe using only 5 ingredients!

Serves : 6-8 people

1 tin of Foul Medammas
1/2 to 1 tin of Water
* adjust amount of water accordingly to how thick/thin you like your kacang pol to be
1 onions - diced
2 cloves of garlic - minced
1 tomato - diced
a few spoons of Tomato sauce
* as for the tomato sauce, I will normally add until the sauce turns slightly reddish in colour.
salt and pepper to taste
cayenne powder (optional)
butter/ghee for sauteing
Condiments : lime, onions, tomatoes, chillies, fried egg.. etc.

1. Open your tin of Foul Medammas and drain the excess water. Pour into a plate and mash it up. I normally mash 80% of the beans so that there's still some texture left :P
2. In a pot, heat up some oil, and saute the onions and garlic until aromatic.
3. Add in the mashed Foul Medammas and stir well.
4. Add in the water, tomatoes, and tomato sauce, stir well and let it cook. Season well with salt, pepper and cayenne powder.
5. Serve with bread. Squeeze a bit of lime juice and garnish it with onions, chillies, tomatoes, and maybe even with a fried egg!
