Steamed Bread Butter Pudding with Coconut Milk

My mum got a new recipe from her friend a few days ago. We got a chance to make one last night. It was pretty simple. When we mention Bread Butter Pudding, we always used milk, but this time, we'll be using coconut milk!

8-10 slices of bread (cut into quarters)
400 ml of thin coconut milk (alt: 200 ml thick coconut milk + 200 ml water)
3/4 cup of sugar
4 whole eggs
1/2 teaspoon of pandan paste (optional: for colour)
1 teaspoon of salt
2 pandan leaves (tie into knot)

1. In a large bowl, stir together coconut milk, sugar, eggs, paste, salt with a whisk until well combine.
2. Soak bread pieces into mixture and let it soak for 10 minutes.
3. Lightly butter your baking pan.
4. Transfer the soaked bread pieces into your baking pan.
5. Pour the remaining mixture onto the bread pieces.
6. Place the pandan leaves over the bread.
7. Cover with cloth napkin. Steam for 15-20 minutes.


We didn't have any pandan paste so the end product was not green in colour. :P

The taste reminds me of Kuih Seri Kaya. Yums!

It's been only 1 day, and there's only a quarter left in the fridge. By tomorrow it will be all gone! :P
