Mushroom Sauce (Campignon sauce)

This recipe will focus on the mushroom sauce (campignon sauce). I bought a ready made breaded chicken chop from Ramly, so all I need to do is to fry the chicken chop. I can make the mushroom sauce ahead of time and heat it up before serving. :P

Note: This sauce is nice served over fish fillets, chicken breasts, chicken chops, hamburger patties, steaks, veggies, pastas etc.

This recipe makes 3 to 4 servings.

2 tbsp of Olive Oil
1/2 of an onion, sliced thinly
5 pcs of button mushroom, sliced thinly
2 tbsp of ghee or butter
1/3 cup of flour
2 tbsp of Mushroom Marinade BBQ Sauce + 3/4 bowl of water
salt and pepper to taste
cayenne to taste

1. In a pot, saute' onions and button mushroom until slightly brown. Side aside.
2. Now, to make the rue. Use the same pot with some of the olive oil still left. On medium high, melt the ghee/butter in a pot and stir with a whisk. When ghee/butter is melted, add the flour (little by little) and whisk the flour in with the butter until the flour cooks fully and no longer looks white. The flour might clump up but that is ok.
3. Add the mixture of Mushroom BBQ Sauce with water 1 cup at a time and whisk to incorporate until all the lumps are gone. Once, the rue is smooth in texture, add the sauteed mushroom and onions back into the pot. Mix well.
4. Turn the heat to medium high for 5-10 minutes, let it boil. The sauce will start to thicken. Now, add salt, pepper and cayenne to taste. Once the sauce is at the desired thickness remove from heat.

As for the Mushroom Sauce, I'm using the Black Pepper Mushroom BBQ Marinade Sauce from Sarawak. You can use the Knorr Mushroom Sauce (Campignon Sauce) in powdered form instead. This is to only give you the 'mushroom flavour' and the 'brown colour' without having to add a lot of extra ingredients. In short, this is the lazy method for cooking mushroom sauce. :))



You can use this recipe instead. Makes 3 servings. However, there's a lot of extra ingredients involved. :P

1/4 cup butter
1/2 pound mushrooms, sliced
1 teaspoon soy sauce
3/4 cup heavy cream
1 tablespoon Dijon mustard
Dash paprika
1 tablespoon fresh parsley, chopped
Salt and pepper, to taste

Melt the butter in a large skillet. Saute' the mushrooms until tender. Stir in the soy sauce, cream and mustard. Bring to a slow boil on medium heat; cook until the sauce has thickened, stirring frequently. Add the paprika and parsley. Season to taste.
