Mozzarella Baked Fish

Had an idea to make my very own homemade Mozzarella Baked Cheese after trying it at Secret Recipe! This recipe serves 2-4 people.

* you may use 1 fillet per person if you wish. :P

2 thick dory fish fillets (cut into 2)
about a cup of Mozzerella cheese shredded
about 6 baby tomatoes sliced in halves
Parsley, finely chopped
Dried oregano
Garlic powder

. Preheat oven to 180°C. Butter large baking dish. Pat fillets dry, and season with salt and pepper.
. Arrange the fillets in the baking dish. Bake until fish is opaque, about 10-15 minutes.
. Once done, remove from oven. Sprinkle the baked fish with cheese and layer with tomato (3 halves each). Dust with oregano and chopped parsley.
. Bake about 5 minutes or until cheese is melted. Serve at once.

I know u can straightaway put the cheese, tomato, and everything on top of the uncooked fish and bake it once, but at the time, it was still not yet dinner time, had a couple hours to spare. So thats why I opt to arrange and bake the toppings at the very last minute (just a few minutes before mealtime). Maybe next time, I'll put the toppings straightaway? :P
